How these totals are made

Basket totals cost a fixed amount of each staple - a kilo of beef, two litres of milk, a dozen eggs - at that shop's price per unit today, so every number bought the same shopping. They only cover the shelves that shop stocks, and a shelf where the shop publishes no price per unit falls back to its cheapest single item, whatever size it comes in. Either shortfall marks the total est., and only a total with neither is called cheapest.

Why compare per kg instead of per item?

Because a bigger pack is not the same buy as a smaller one. A 2kg bag of pasta beside a 500g box tells you nothing until both are priced per kg, and supermarkets do not sell the same sizes as each other. Every shelf here is ranked per kg, per litre or per item, so like is compared with like. The basket totals are the other half of the answer: they add the cheapest item on each shelf, which is what a weekly shop actually costs.
